Preparing Pork Cutlet

Prepare the Pork
Trim any excess fat from the pork loin and slice it into 4 equal pieces. Use a meat mallet to pound each piece to about 1/2 inch thickness.

Season the Pork
Season both sides of the pork cutlets with salt and black pepper.

Set Up Breading Station
In three separate shallow dishes, place flour in one, beaten eggs in the second, and bread crumbs in the third.

Bread the Cutlets
Dredge each pork cutlet first in flour, shaking off the excess, then dip in the beaten eggs, and finally coat with bread crumbs, pressing gently to adhere.
Frying Cutlets

Heat Oil
In a large skillet, heat vegetable oil over medium-high heat until hot.

Fry the Cutlets
Carefully place the breaded cutlets in the hot oil. Fry for 3-4 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.
Assembling the Sandwich

Prepare the Buns
Slice the hamburger buns in half and lightly toast them if desired.

Assemble the Sandwiches
Spread 1 tablespoon of yellow mustard on the bottom half of each bun. Place a fried pork cutlet on top, add 2 pickle slices, and a handful of lettuce. Top with the other half of the bun.
