Method

Potato Confit

    Prepare the Potatoes

    Peel and slice the Yukon Gold potatoes into thin rounds (about 1/4 inch thick).

    Cook the Potatoes

    In a large saucepan, combine the duck fat, sliced potatoes, salt, and thyme. Heat over low to medium heat until the duck fat is melted and the mixture is simmering.

    Confit the Potatoes

    Cook the potatoes gently for 40-50 minutes, until they are tender but not falling apart. Stir occasionally to ensure even cooking.

    Drain and Set Aside

    Once cooked, remove the potatoes from the fat and let them drain on a paper towel. Reserve some duck fat for later use.

Ham & Speck

    Slice the Meats

    Thinly slice the Black Forest ham and speck into small strips.

    Sauté the Meats

    In a skillet over medium heat, add a little reserved duck fat and sauté the sliced ham and speck until crispy and golden brown, about 5-7 minutes. Remove from heat and set aside.

Savory Cream Cheese

    Prepare the Cream Cheese Mixture

    In a mixing bowl, combine the cream cheese, minced garlic, chopped chives, and lemon juice. Mix well until smooth and creamy.

    Season the Cream Cheese

    Add salt and black pepper to taste and mix until incorporated.

Toasted Sourdough Crumbs

    Prepare the Sourdough

    Tear the sourdough bread into small pieces.

    Toast the Bread

    In a skillet, heat olive oil over medium heat, then add the torn bread pieces. Toast until golden and crispy, about 3-5 minutes. Remove from heat.

Assembly

    Plate the Dish

    On a serving plate, layer the duck fat potatoes, followed by the crispy ham and speck mixture.

    Add the Cream Cheese

    Dollop the savory cream cheese over the top of the potatoes and meats.

    Sprinkle the toasted sourdough crumbs over the top and garnish with fresh watercress. Serve immediately.
