Mixed Green Salad

    Prepare the Vegetables

    Wash the mixed greens thoroughly under cold water and dry using a salad spinner. Halve the cherry tomatoes and slice the cucumber into thin rounds. Finely chop the red onion.

    Combine Ingredients

    In a large salad bowl, add the mixed greens, cherry tomatoes, cucumber, and red onion.

    Add Cheese

    Sprinkle the feta cheese over the top of the salad.

    Make the Dressing

    In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper.

    Toss the Salad

    Drizzle the dressing over the salad and toss gently to combine all ingredients.

    Serve immediately as a fresh side dish or light meal.

Seasonal Marinated Salad

    Prepare the Vegetables

    Trim the ends of the asparagus and cut them into 2-inch pieces. Slice the bell peppers into thin strips and thinly slice the red onion.

    Bring a pot of salted water to a boil and blanch the asparagus pieces for 2-3 minutes until they are bright green and tender-crisp. Immediately transfer to an ice bath to stop the cooking process.

    In a large bowl, combine the blanched asparagus, bell peppers, and red onion.
