Cake Preparation

    Melt Chocolate and Butter

    In a heatproof bowl, combine the unsweetened dark chocolate and unsalted butter. Melt over a double boiler or in the microwave, stirring until smooth. Allow to cool slightly.

    Beat Eggs and Sugar

    In a separate bowl, whisk together the granulated sugar and eggs until the mixture is pale and thick, about 5 minutes.

    Combine Ingredients

    Gently fold the melted chocolate mixture into the egg mixture. Add the vanilla extract and a pinch of salt, mixing until combined.

    Add Flour

    Sift the all-purpose flour over the mixture and carefully fold until just combined. Do not overmix.

    Bake the Cake

    Preheat the oven to 170°C (340°F). Grease and line a 9-inch round cake pan. Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack.

Assemble the Cake

    Slice and Fill

    Once the cake has cooled completely, slice it horizontally into two equal layers. Spread apricot jam evenly over the bottom layer and place the top layer back on.

Icing Preparation

    Make the Chocolate Icing

    In a saucepan, heat the heavy cream until just simmering. Remove from heat and add the dark chocolate, stirring until melted and smooth.

    Ice the Cake

    Pour the chocolate icing over the assembled cake, allowing it to drip down the sides. Smooth the top with a spatula if needed.

    Make Whipped Cream

    In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip with an electric mixer until soft peaks form.

    Serve slices of the Sachertorte with a generous dollop of whipped cream on top.
