For the Skate Wing

    Prepare the Skate Wing

    Season the skate wings with salt and black pepper on both sides.

    Sear the Skate Wing

    In a large skillet, heat the olive oil over medium-high heat. Add the skate wings and sear for about 3-4 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

    Make the Brown Butter Sauce

    In the same skillet, add the butter and let it melt. Add the capers, roasted red peppers, and chopped olives. Cook for 2-3 minutes until the sauce is fragrant and slightly browned. Remove from heat.

    Serve

    Plate the skate wings and drizzle the brown butter sauce over the top.

For the Arugula Potatoes

    Boil the Potatoes

    In a pot, bring salted water to a boil. Add the baby potatoes and cook until fork-tender, about 15-20 minutes. Drain and let cool slightly.

    Sauté the Potatoes

    In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Combine and Season

    Add the boiled potatoes to the skillet and toss to coat in the garlic oil. Season with salt, black pepper, and lemon juice. Cook for an additional 5 minutes until heated through.

    Add Arugula

    Remove from heat and toss in the arugula until wilted. Serve alongside the skate wing.
