Prepare the Ingredients
Season the Cedar River prime beef escalope pieces with salt and black pepper on both sides.

Breading Process
Dredge each escalope in flour, shaking off the excess. Dip them in beaten eggs, and finally coat with breadcrumbs.

Searing the Escalopes
In a large skillet, heat olive oil and butter over medium-high heat. Once hot, add the breaded escalopes and sear for 3-4 minutes on each side until golden brown and cooked through. Remove from the skillet and keep warm.
