Activate the Yeast
In a small bowl, combine warm water (1.5 cups) and sugar (1 tbsp). Sprinkle active dry yeast (2 tbsp) over the water and let it sit for about 5-10 minutes until it becomes frothy.

Mix Ingredients
In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tsp). Pour the yeast mixture and melted unsalted butter (2 tbsp) into the flour mixture. Stir until a dough begins to form.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 5-7 minutes until the dough is smooth and elastic.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

Preheat Oven
Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper.

Shape the Pretzels
Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope and twist it into a pretzel shape.

In a large pot, bring water (10 cups) to a boil and add baking soda (2 tbsp) to create the baking solution.

Boil the Pretzels
Carefully drop each pretzel into the boiling solution for about 30 seconds. Remove with a slotted spoon and place on the lined baking sheet.

Bake the pretzels in the preheated oven for 12-15 minutes or until they are golden brown. Remove and let cool slightly.
