Prepare the Gelatin
In a small bowl, sprinkle the gelatin over cold water and let it sit for about 5-10 minutes until it blooms.

Heat the Cream Mixture
In a saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring frequently until the sugar dissolves and the mixture is hot but not boiling.

Combine Gelatin with Cream Mixture
Remove the saucepan from heat. Add the bloomed gelatin to the hot cream mixture, stirring until fully dissolved. Stir in the vanilla extract.

Pour into Molds
Pour the mixture into individual serving cups or molds. Allow them to cool to room temperature, then refrigerate for at least 4 hours (or overnight) until set.
Berry Sauce

Cook the Berries
In a saucepan, combine the mixed berries, granulated sugar, and lemon juice over medium heat. Cook for about 5-7 minutes, stirring occasionally until the berries break down and the sauce thickens slightly.

Cool the Sauce
Remove from heat and let the berry sauce cool to room temperature. You can strain the sauce if you prefer a smoother texture.

Serve
Once the panna cotta is set, carefully unmold it onto serving plates and drizzle the berry sauce over the top before serving.
