    Prepare the Dough

    In a large mixing bowl, combine the flour and salt. Make a well in the center and crack the eggs into it. Gradually pour in the milk while whisking the mixture until smooth and thick. Let the dough rest for about 30 minutes.

Cooking the Spätzle

    Cook the Spätzle

    Bring a large pot of salted water to a boil. Using a Spätzle maker or a colander, press the dough into the boiling water. Cook for 2-3 minutes or until the Spätzle float to the top. Remove with a slotted spoon and set aside.

Preparing the Topping

    Sauté the Onions

    In a large skillet, melt the butter over medium heat. Add the sliced onions and sauté until they are golden brown and caramelized, about 10 minutes.

Assembling the Dish

    Combine and Serve

    In a large baking dish, layer half of the cooked Spätzle, then sprinkle half of the Emmental and Parmesan cheese over them. Add the sautéed onions, then layer the remaining Spätzle and top with the remaining cheese. Bake in a preheated oven at 350°F (175°C) for 20 minutes until the cheese is melted and bubbly. Serve hot, garnished with chopped parsley and black pepper to taste.
