Pumpkin Spice Cake

Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

Combine Mixtures
Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

Bake the Cake
Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Prepare Gelatin
In a small bowl, mix gelatin with water and let it sit for about 5 minutes to bloom.

Heat Gelatin
In a small saucepan, heat the bloomed gelatin over low heat until dissolved. Remove from heat.

Combine Ingredients
In a large bowl, whisk together the pumpkin puree, powdered sugar, cinnamon, and ginger. Add the dissolved gelatin and mix well.

Whip Cream
In a separate bowl, whip the heavy cream until soft peaks form.

Fold Mixtures
Gently fold the whipped cream into the pumpkin mixture until fully integrated.

Transfer the mousse into serving cups and refrigerate for at least 2 hours before serving.

Pour the mixture onto the prepared baking sheet and spread it out evenly. Let it cool completely before breaking into pieces.
