Cabbage Rolls Preparation

    Prepare Cabbage Leaves

    Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head into the boiling water for about 3-5 minutes to soften. Remove the cabbage and let it cool slightly before peeling off 8 leaves.

    Prepare Filling

    In a large bowl, combine ground beef, ground pork, chopped onion, minced garlic, beer, bread crumbs, egg, salt, black pepper, and paprika. Mix until well combined.

    Assemble Rolls

    Place about 2-3 tablespoons of the meat mixture in the center of each cabbage leaf. Roll the leaf tightly, tucking in the sides as you go. Secure with a toothpick if necessary.

Cooking Cabbage Rolls

    Braze the Rolls

    In a large skillet or Dutch oven, add a little oil and place the cabbage rolls seam-side down. Pour in any remaining beer and enough water to cover half of the rolls. Cover with a lid and simmer on low heat for about 45 minutes, turning occasionally.

    Cook Red Cabbage

    In a separate pot, combine shredded red cabbage, apple cider vinegar, sugar, salt, and water. Bring to a boil, then reduce heat and simmer for about 30 minutes, until cabbage is tender.

Salt Potatoes Preparation

    Prepare Potatoes

    In a pot, cover small potatoes with cold water and add 2 tablespoons of salt. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly.

    Finish Potatoes

    Add butter to the warm potatoes and sprinkle with fresh chopped parsley. Toss gently to combine.
