Preparing the Goulash

    Searing the Beef

    In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add the beef cubes in batches, searing them on all sides until browned. Remove the beef and set aside.

    Sautéing the Vegetables

    In the same pot, add the chopped onions and sauté for about 5 minutes until translucent. Add the minced garlic, diced red bell pepper, and sliced carrot. Cook for an additional 3-4 minutes until the vegetables are softened.

    Adding Spices

    Stir in the paprika, cayenne pepper, caraway seeds, salt, and black pepper. Cook for another minute until fragrant.

    Combining Ingredients

    Return the seared beef to the pot. Add the beef broth and tomato paste, stirring to combine. Drop in the bay leaves.

    Simmering

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the sauce has thickened. Stir occasionally, adding more broth if necessary.

Preparing the Spätzle

    Making the Batter

    In a mixing bowl, combine 2 cups of all-purpose flour and 1 teaspoon of salt. In a separate bowl, whisk together 3 large eggs and 1 cup of milk. Gradually add the egg mixture to the flour, stirring until a thick batter forms.

    Cooking the Spätzle

    Bring a large pot of salted water to a boil. Using a spätzle maker or a colander with large holes, press the batter through into the boiling water. Cook for about 2-3 minutes, or until the spätzle floats to the surface. Remove with a slotted spoon and set aside.

    Finishing Touches

    In a skillet, melt 2 tablespoons of butter over medium heat. Add the cooked spätzle and sauté until slightly golden. Season with salt to taste and sprinkle with chopped parsley before serving.
