    Prepare the Beef

    Cut the chuck beef into bite-sized pieces, trimming off any excess fat.

    Chop the Vegetables

    Dice the onions, garlic, carrots, bell peppers, and potatoes. Set aside.

Cooking

    Brown the Beef

    In a large pot, heat the vegetable oil over medium-high heat. Add the beef pieces and brown them on all sides, about 5-7 minutes. Remove the beef and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onions and garlic. Sauté for 3-4 minutes until softened. Then add the carrots, bell peppers, and potatoes, cooking for another 5 minutes.

    Add Beef and Liquid Ingredients

    Return the browned beef to the pot. Add the diced tomatoes, beef broth, paprika, salt, black pepper, bay leaves, dried thyme, and Worcestershire sauce. Stir to combine.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors meld together.

    Remove bay leaves and adjust seasoning if necessary. Serve hot with bread or over egg noodles, if desired.
