Beef Consommé Preparation

    Rinse the beef bones under cold water to remove any impurities. Chop the carrot, celery, onion, and garlic into large chunks.

    In a large pot, combine the beef bones, chopped vegetables, bay leaves, peppercorns, and water. Bring to a boil over high heat, then reduce to a simmer. Skim off any foam that rises to the surface.

    Allow the broth to simmer for about 4-6 hours, covered, ensuring it doesn't boil vigorously. Add salt to taste towards the end of cooking.

    Once the broth is ready, strain it through a fine-mesh sieve to remove solids. Return the clear broth to the pot and keep warm.

Julienne Vegetables Preparation

    Using a sharp knife, cut the carrot, celery, and zucchini into thin julienne strips.

    In a small pot, bring a little water to a boil and blanch the julienned vegetables for about 2-3 minutes until just tender. Drain and set aside.
