Beef Patties

    Prepare the Beef

    Divide the dry-aged prime beef into two equal portions of 3 oz each. Form each portion into a loose ball and then flatten them into patties, making them slightly larger than the brioche buns.

    Season the Patties

    Sprinkle both sides of the patties evenly with salt and black pepper.

    Cook the Patties

    Heat a skillet or griddle over medium-high heat. Add the patties and cook for about 3-4 minutes on one side until a crust forms. Flip the patties and cook for another 2-3 minutes. Place a slice of white cheddar on each patty during the last minute of cooking to melt.

    Prepare the Onion

    Slice the medium onion into thin rings.

    Toast the Buns

    In the same skillet used for the patties, add the brioche buns cut side down and toast until golden brown, about 1-2 minutes.

    Assemble the Burger

    On the bottom half of each toasted brioche bun, place a beef patty with melted cheddar, followed by onion rings, garlic dill pickles, and a generous drizzle of Bama sauce. Top with the other half of the bun.

    Prepare the Potatoes

    Peel the large potatoes and cut them into thin strips to make fries.

    Fry the Potatoes

    Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle them with salt to taste.
