Prepare the Chicken
Pound the chicken breasts to an even thickness of about 1/2 inch. This will ensure they cook evenly.

Set Up Breading Station
In three separate shallow bowls, place the Parmesan cheese, bread crumbs, and beaten eggs (whisked together with salt and pepper).

Bread the Chicken
Dip each chicken breast first into the egg mixture, then into the Parmesan cheese, followed by the bread crumbs. Make sure each piece is evenly coated.

Fry the Chicken
In a large skillet, heat olive oil over medium-high heat. Once hot, carefully add the breaded chicken cutlets. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain excess oil.

Prepare the Salad Ingredients
Chop the Bibb lettuce into bite-sized pieces. Dice the red bell pepper, and roughly chop the walnuts and parsley.

Mix the Salad
In a large bowl, combine the chopped Bibb lettuce, diced red bell pepper, walnuts, and parsley. Toss gently to mix.

Dress the Salad
Drizzle the creamy bleu cheese dressing over the salad mixture and toss to coat evenly.
Assembly

Plate the Dish
Place a fried chicken cutlet on a plate and top generously with the chopped salad mixture. Serve immediately.
