    Chop the Vegetables

    Wash and peel the carrots and potatoes. Chop the carrots, celery, onion, and potatoes into small, even-sized pieces. Mince the garlic.

    Prepare the Greens

    If using fresh spinach or kale, wash thoroughly and chop coarsely.

Cooking

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté for about 5-7 minutes until the vegetables soften.

    Add Broth and Seasonings

    Pour in the vegetable or chicken broth and water. Add the chopped potatoes, bay leaves, thyme, salt, and black pepper. Bring the mixture to a boil.

    Simmer the Soup

    Once boiling, reduce heat to low and let the soup simmer for 20-25 minutes, or until the potatoes and carrots are tender.

    Add Greens

    Stir in the chopped spinach or kale and lemon juice. Let it simmer for another 5 minutes until the greens are wilted.

    Final Seasoning

    Taste the soup and adjust seasoning with more salt and pepper if necessary. Remove bay leaves before serving.

    Ladle the soup into bowls and serve warm. Optionally, garnish with fresh herbs or a sprinkle of cheese.
