Prepare the Apple Filling
In a large mixing bowl, combine the sliced apples, sugar, cinnamon, lemon juice, and raisins. Toss until the apples are well coated. Let the mixture sit for 10 minutes to allow the flavors to meld.

Prepare the Pastry
Preheat the oven to 375°F (190°C). On a floured surface, roll out the puff pastry sheets. Cut each sheet into a rectangle large enough to hold the apple filling.

Fill the Pastry
Place a generous amount of the apple filling in the center of each pastry rectangle. Fold the edges over the filling and seal them by pressing down with a fork.

Bake the Strudel
Brush the tops of the pastries with the beaten egg to give them a golden color. Place them on a baking sheet lined with parchment paper and bake for about 25-30 minutes or until golden brown.

Allow the strudels to cool slightly, then dust with powdered sugar before serving.

Mix the Filling
In a mixing bowl, combine the pumpkin puree, softened cream cheese, sugar, and pumpkin spice. Beat with an electric mixer until smooth and creamy.

In another bowl, mix the graham cracker crumbs with the melted butter until the crumbs are evenly moistened. Press the mixture into the bottom of serving cups to form a crust.

Spoon the pumpkin cream mixture over the crust in each cup, smoothing the top with a spatula. Refrigerate for at least 2 hours to set.
