Chicken

Method

Prepare Chicken

  1. 1

    Season the Chicken

Season the chicken paillard with salt and black pepper on both sides.

  2. 2

    Sear the Chicken

In a large skillet over medium heat, add olive oil. Once hot, add the seasoned chicken paillard and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.

Make the Sauce

  1. 3

    Sauté Vegetables

In the same skillet, add the chopped onion and sauté until translucent. Add minced garlic and sliced red bell pepper, cooking for an additional 3-4 minutes.

  2. 4

    Add Paprika and Broth

Stir in the smoked paprika and cook for 1 minute, then pour in the chicken broth. Bring to a simmer.

  3. 5

    Finish the Sauce

Reduce the heat and add the heavy cream. Stir well and let it simmer for 5 minutes until slightly thickened. Return the cooked chicken to the skillet and coat in the sauce. Cook for an additional 2-3 minutes.

  4. 6

    Garnish

Just before serving, sprinkle chopped fresh parsley over the dish.

Cook Potatoes

  1. 7

    Boil Potatoes

Place peeled and cubed potatoes in a pot of salted water. Bring to a boil and cook for about 15-20 minutes until tender.

  2. 8

    Mash Potatoes

Drain the potatoes and return to the pot. Add butter, salt, and black pepper. Mash until smooth and creamy.
