Pork Cutlet

Prepare the Pork Cutlets
Season the Duroc pork cutlets with salt, black pepper, and garlic powder on both sides.

Bread the Cutlets
Dredge each pork cutlet in the flour, shaking off excess, then dip in the beaten eggs, and finally coat with bread crumbs. Press the crumbs onto the cutlets to ensure they adhere well.

Pan Fry the Cutlets
Heat vegetable oil in a large skillet over medium heat. Once hot, add the breaded cutlets and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Salad
Once cooled, peel and dice the potatoes. In a large bowl, combine the mayonnaise, mustard, diced celery, diced red onion, salt, black pepper, and fresh dill. Gently fold in the diced potatoes until well coated.
