Prepare the Salad

Combine Salad Ingredients
In a large bowl, combine the mixed seasonal greens, shredded red cabbage, sliced cucumber, and shaved radish. Toss gently to mix.
Make the Croutons

Prepare Bread
Preheat your oven to 375°F (190°C). Cut the bread into cubes.

Season Croutons
In a mixing bowl, toss the bread cubes with olive oil, garlic powder, salt, and pepper until evenly coated.

Bake Croutons
Spread the bread cubes on a baking sheet in a single layer. Bake for 10-15 minutes or until golden brown, tossing halfway through for even crispness. Remove from the oven and let cool.
Prepare the Vinaigrette

Mix Vinaigrette Ingredients
In a small bowl, whisk together pumpkin seed oil, apple cider vinegar, honey or maple syrup, and season with salt and pepper to taste.
Assemble the Salad

Combine Everything
Drizzle the vinaigrette over the salad mixture and toss to coat evenly. Top with the homemade croutons.
