Preparation of Meats

Prepare the pork loin
Rub the bone-in pork loin with olive oil, salt, black pepper, smoked paprika, garlic powder, and onion powder. Make sure to coat it evenly. Let it marinate for at least 1 hour, or preferably overnight in the refrigerator.

Prepare the pork belly
Score the skin of the pork belly in a criss-cross pattern to help it render and become crispy. Rub with olive oil, salt, and black pepper. Set aside.

Prepare the bauernwurst
Prick the bauernwurst sausages with a fork to prevent bursting during cooking. Set aside.

Grill the pork belly
Preheat your grill to medium-high heat. Place the pork belly on the grill, skin side down. Grill for about 5-7 minutes per side, or until the skin is crispy and the meat is cooked through. Remove from grill and let it rest for a few minutes before slicing.

Preparing the Creamy Horseradish Sauce

Mix the sauce
In a bowl, combine sour cream, prepared horseradish, lemon juice, Dijon mustard, salt, and black pepper. Mix well until smooth and creamy. Adjust seasoning to taste.

Plate the dish
Slice the smoked pork loin, pork belly, and bauernwurst. Arrange on a serving platter and serve with the creamy horseradish sauce on the side.
