Method

Preparing the Strudel Dough

  1. 1

    Make the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Add the water and olive oil, and mix until a dough forms. Knead the dough on a floured surface for about 5-10 minutes until smooth and elastic.

  2. 2

    Rest the Dough

Cover the dough with a clean cloth or plastic wrap and let it rest for at least 30 minutes at room temperature.

Preparing the Filling

  1. 3

    Mix the Filling

In a large bowl, combine the sliced apples, granulated sugar, cinnamon, lemon juice, raisins, and breadcrumbs. Mix well and set aside.

Assembling the Strudel

  1. 4

    Roll Out the Dough

On a large, floured surface, roll out the rested dough as thin as possible, ideally to about 1/8 inch thick. It should be translucent.

  2. 5

    Add the Filling

Brush the surface of the rolled-out dough with melted butter. Spread the apple mixture evenly over the dough, leaving about 1 inch of space along the edges.

  3. 6

    Roll the Strudel

Starting from one end, gently roll the dough over the filling, tucking in the edges as you go. Place the rolled strudel seam-side down on a baking sheet lined with parchment paper.

  4. 7

    Brush and Bake

Brush the top of the strudel with more melted butter. Bake in a preheated oven at 375°F (190°C) for 30-35 minutes or until golden brown.

Preparing the Vanilla Sauce

  1. 8

    Make the Vanilla Sauce

In a saucepan over medium heat, combine the milk, sugar, and vanilla extract. In a small bowl, mix the cornstarch with a little cold milk to create a slurry. Once the milk mixture is warm, whisk in the cornstarch slurry and cook until thickened. Add the egg yolk and stir well, cooking for another minute.

Serving

  1. 9

    Serve

Slice the baked apple strudel and serve warm with a generous drizzle of vanilla sauce on top.
