Chicken Paillard

Method

Chicken Paillard

  1. 1

    Prepare the Chicken

Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin.

  2. 2

    Marinate the Chicken

In a bowl, whisk together olive oil, lemon juice, minced garlic, thyme, salt, and black pepper. Add the pounded chicken breasts to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.

  3. 3

    Grill the Chicken

Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 4-5 minutes per side, or until cooked through and juices run clear. Let rest for a few minutes before slicing.

Grilled Salmon

  1. 4

    Prepare the Salmon

Pat the salmon fillets dry with paper towels. This helps to achieve a better sear.

  2. 5

    Marinate the Salmon

In a bowl, mix olive oil, lemon juice, dill, salt, and black pepper. Rub this mixture all over the salmon fillets and let them marinate for at least 15 minutes.

  3. 6

    Grill the Salmon

Preheat the grill to medium heat. Place the salmon fillets skin-side down on the grill. Cook for about 6-8 minutes, then carefully flip and grill for an additional 4-6 minutes or until the salmon flakes easily with a fork.
