Method
Preparing the Ingredients
Cook the Meats
In a skillet over medium heat, cook the chicken breast and ground beef until fully cooked. Season with salt and pepper to taste. Shred the chicken and keep warm.
Prepare the Corn
In a separate pot, bring water to a boil and add corn kernels. Cook for about 5 minutes until tender, then drain.
Cook the Rice
Prepare the seasoned rice according to package instructions, usually boiling water and adding rice until fluffy.
Heat the Tortillas
Heat a skillet over medium heat. Warm each soft corn tortilla for about 30 seconds on each side until pliable.
Prepare the Beans
If using canned beans, rinse and heat them in a small pot until warm. If using dried beans, cook them according to package instructions.
Assembling the Dish
Build Your Tortilla
On each warm tortilla, layer a scoop of cooked chicken or beef, followed by a spoonful of corn kernels. Top with seasoned rice and your choice of beans.
Add Salsa and Toppings
Drizzle homemade salsa verde over the filling, and sprinkle with queso fresco. Optionally, add more salsa if desired.
Serve with Chips
On the side, serve tortilla chips with additional salsa verde or any preferred salsa.
