Bake the Potatoes

Preheat your oven to 400°F (200°C). Scrub the Russet potatoes under cold water to remove any dirt. Pat them dry with a towel.

Season the Potatoes

Using a fork, poke several holes in each potato. Rub the skin with olive oil, then sprinkle salt and black pepper evenly over the potatoes.

Bake

Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until the skin is crispy and a fork easily pierces through the center.

Prepare the Filling

While the potatoes are baking, prepare the filling. In a medium bowl, combine the chopped cooked bacon, shredded cheddar cheese, sour cream, and sliced green onions.

Stir the filling mixture until all ingredients are evenly combined and set aside until the potatoes are ready.

Once the potatoes are baked and cool enough to handle, carefully cut a slit down the center of each potato, being careful not to cut all the way through. Gently fluff the insides with a fork.
