Method

Preparation of Chicken

1

Season the Chicken

In a bowl, combine the olive oil, minced garlic, salt, black pepper, paprika, and the juice of half the lemon. Mix well to create a marinade.

2

Marinate the Chicken

Add the chicken breasts to the marinade, ensuring they are well coated. Cover with plastic wrap and let it marinate in the refrigerator for at least 30 minutes.

Cooking the Chicken

3

Preheat the Oven

Preheat your oven to 200°C (400°F).

4

Cook the Chicken

Place the marinated chicken breasts on a baking tray. Add the rosemary sprigs on top and squeeze the remaining lemon juice over the chicken. Bake for 25-30 minutes, or until fully cooked and juices run clear.

Preparing the Side

5

Prepare Asparagus and Tomatoes

While the chicken is baking, trim the ends of the asparagus and cut the cherry tomatoes in half. Place them on a separate baking tray.

6

Season and Roast Vegetables

Drizzle the asparagus and cherry tomatoes with balsamic vinegar, a pinch of salt, and pepper. Roast in the oven for the last 15 minutes of the chicken cooking time.

7

Add Parmesan

Once the vegetables are tender and slightly caramelized, remove them from the oven and sprinkle with grated Parmesan cheese.

Serving

8

Plate the Dish

Once the chicken is done, let it rest for 5 minutes before slicing. Serve it alongside the roasted asparagus and cherry tomatoes. Drizzle any remaining juices from the baking tray over the chicken for added flavor.
