Prepare Base

Cook the Rice

In a medium saucepan, combine 1 cup of brown rice and 2 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for about 45 minutes, or until rice is tender and water is absorbed. Remove from heat and let it sit covered for 10 minutes.

Heat the Beans and Corn

In a small saucepan, drain and rinse 1 cup of black beans and 1 cup of corn. Add them to the saucepan over medium heat. Stir occasionally and cook for about 5-7 minutes until heated through. Season with salt and pepper to taste.

Chop Vegetables

While the rice and protein are cooking, prepare the vegetables. Halve the cherry tomatoes, dice the red onion and bell pepper, and cube the avocado. Set aside in a large mixing bowl.

Assemble Bowl

Combine Ingredients

Once the rice is ready, fluff it with a fork and add it to the mixing bowl with the chopped vegetables. Top with the heated black beans and corn. Sprinkle cumin, chili powder, and additional salt and pepper over the top.

Add fresh cilantro, drizzle lime juice, and add dollops of sour cream. Finally, sprinkle shredded cheese over the entire bowl.
