Preparation

    Prepare the Mashed Potatoes

    Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain, then mash with butter, milk, and wasabi powder. Season with salt to taste.

    Cook the Spinach

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add fresh spinach, cooking until wilted. Season with salt and black pepper, then set aside.

    Make the Glaze

    In a saucepan, combine mirin, soy sauce, and grated ginger. Bring to a simmer and cook for 5-7 minutes until slightly thickened.

    Cook the Salmon

    Season the salmon fillets with salt and pepper. In a separate skillet, sear the salmon over medium-high heat for 4-5 minutes per side until cooked through. Brush with the soy glaze while cooking.

    Plate the Dish

    On each plate, place a generous scoop of wasabi mashed potatoes, top with sautéed spinach, and place a piece of salmon on top. Drizzle with additional soy glaze and finish with a spoonful of mango chutney.
