Preparation

    Aging the Steak

    Ensure the Tomahawk steak has been aged for 36 days. Remove from the fridge and let it come to room temperature for about 1 hour before cooking.

    Seasoning

    Generously season both sides of the steak with kosher salt and freshly ground black pepper. Let it sit for about 30 minutes to absorb the seasoning.

Cooking

    Preheat the Grill

    Preheat your grill to high heat, around 450°F (232°C).

    Searing the Steak

    Brush the steak with olive oil. Place it on the grill and sear for about 4-5 minutes on each side, creating a nice crust.

    Adding Aromatics

    During the last few minutes of grilling, add the rosemary, thyme, and crushed garlic cloves to the grill for added flavor.

    Cooking to Desired Doneness

    Use a meat thermometer to check the internal temperature. For medium-rare, aim for about 130°F (54°C). Cook longer if a higher doneness is desired.

    Resting

    Remove the steak from the grill and let it rest for at least 15 minutes before slicing. This allows the juices to redistribute.
