Gnocchi Preparation

    Make the Gnocchi

    Boil the potatoes until fork-tender, drain and let cool. Once cool, peel and mash the potatoes. In a bowl, combine mashed potatoes, flour, egg, and salt. Mix until a dough forms. Roll into ropes and cut into bite-sized pieces.

Filling

    Prepare Filling

    In a bowl, mix ricotta cheese, Parmesan Reggiano, shaved black truffle, salt, and black pepper until well combined. Fill each gnocchi piece with a small amount of the mixture and seal tightly.

Cooking Gnocchi

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Carefully drop the stuffed gnocchi into the boiling water. Cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.

Sauce Preparation

    Make the Sauce

    In a saucepan over medium heat, combine heavy cream, Parmesan Reggiano, black truffle oil, salt, and black pepper. Stir until the cheese is melted and the sauce is creamy.

Plating

    Serve

    Plate the cooked gnocchi and drizzle with the Parmesan cream sauce. Garnish with additional shaved black truffle and serve immediately.
