Fava Bean Purée

Bilbao Chorizo Mole Bordelaise

Method

Preparation of Quail

    Season the Quail

    Rub the quail with olive oil, salt, and black pepper. Set aside.

    Sear the Quail

    In a skillet over medium-high heat, sear the quail for 4-5 minutes on each side until golden brown. Remove and set aside.

Fava Bean Purée

    Cook the Fava Beans

    In a pot, boil the fava beans for 3-4 minutes until tender. Drain and set aside.

    Blend the Purée

    In a food processor, combine the fava beans, garlic, lemon juice, olive oil, and salt. Blend until smooth. Set aside.

Bilbao Chorizo Mole Bordelaise

    Prepare the Mole

    In a saucepan, sauté chopped onion and garlic until translucent. Add chorizo and cook until browned.

    Simmer the Sauce

    Add red wine, beef stock, cocoa powder, cinnamon, salt, and black pepper. Simmer for 20 minutes until thickened.

Assembly

    Plate the Dish

    On a plate, spread a layer of fava bean purée, place the seared quail on top, and drizzle with the chorizo mole bordelaise.
