Method

Elk Chop Preparation

    Prepare the Porcini Crust

    In a food processor, blend the dried porcini mushrooms into a fine powder. Combine with salt and black pepper.

    Coat the Elk Chops

    Rub elk chops with olive oil and then coat them in the porcini powder mixture.

    Cook the Elk Chops

    Heat a grill or skillet over medium-high heat. Cook the elk chops for about 4-5 minutes on each side, or until they reach your desired doneness.

Coriander Blackberry Jam Preparation

    Cook the Jam

    In a saucepan, combine blackberries, sugar, ground coriander, and lemon juice. Cook over medium heat until the mixture thickens, about 15-20 minutes. Let it cool.

Barolo Wine Reduction Preparation

    Make the Reduction

    In a saucepan, combine Barolo wine and beef stock. Simmer over medium heat until reduced by half. Stir in butter until melted and smooth.

Whipped Rutabaga and Swiss Chard Preparation

    Cook Rutabaga

    Boil rutabaga in salted water until tender, about 20 minutes. Drain and mash with heavy cream, salt, and pepper.

    Prepare Swiss Chard

    In a separate pan, sauté Swiss chard in olive oil until wilted. Combine with mashed rutabaga and mix well.
