Method

Prepare the Marinara Sauce

    Cook the Garlic

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Add Tomatoes and Seasonings

    Add crushed tomatoes, oregano, salt, black pepper, sugar, and fresh basil to the saucepan. Stir well and let simmer for 20 minutes on low heat.

Prepare the Chipotle Aioli

    Mix Ingredients

    In a bowl, combine mayonnaise, chipotle pepper, lime juice, minced garlic, and salt. Mix until smooth and set aside.

Prepare the Calamari

    Set Up Your Breading Station

    In one bowl, place the buttermilk and beaten egg. In another bowl, mix flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper.

    Bread the Calamari

    Dip each calamari ring first in the buttermilk mixture, then coat with the flour mixture.

    Fry the Calamari

    In a deep pan, heat vegetable oil to 350°F (175°C). Fry the breaded calamari in batches for 2-3 minutes until golden and crispy. Drain on paper towels.

Serve

    Plate and Enjoy

    Serve the crispy calamari with housemade marinara sauce and chipotle aioli on the side.
