Preparation
- 1
Prepare the Lobster
Boil the Maine lobster in salted water for about 15-20 minutes until fully cooked. Remove from heat, cool, and crack the shell to extract the meat. Cut the lobster meat into bite-sized pieces.
- 2
Cook the Shrimp
In a pot of boiling salted water, add the jumbo shrimp and cook for 2-3 minutes until they turn pink. Remove from heat, cool, and peel the shells.
- 3
Shuck the Oysters
Carefully shuck the oysters using an oyster knife, keeping the meat in its shell. Rinse the oysters under cold water.
- 4
Prepare the Stone Crab
If using fresh stone crab claws, boil them for 5-7 minutes. Allow them to cool, then serve chilled.
- 5
Prepare the Tuna Tartare
Finely dice fresh sushi-grade tuna and mix with your choice of seasonings such as soy sauce, sesame oil, and green onions. Chill until ready to serve.
Assembly
- 6
Assemble the Platter
On a large platter or tiered stand, arrange the lobster meat, jumbo shrimp, oysters on the half shell, and stone crab claws artistically. Add a small bowl of tuna tartare in the center.
- 7
Add Sauces
Place small bowls of horseradish, cocktail sauce, and mustard aioli around the seafood for dipping.
