Braised Short Ribs

    Prepare the ribs

    Preheat your oven to 325°F (165°C). Season the short ribs with salt and black pepper.

    Sear the ribs

    In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.

    Sauté vegetables

    In the same pot, add chopped onion and carrots. Sauté until softened, about 5 minutes. Add minced garlic and cook for an additional minute.

    Deglaze and braise

    Pour in the port wine and beef broth, scraping any browned bits off the bottom. Return the short ribs to the pot, add thyme and bay leaves. Bring to a simmer.

    Bake

    Cover the pot and transfer it to the oven. Braise for 2.5 to 3 hours, until the ribs are tender.

Whipped Potatoes

    Boil potatoes

    In a large pot, boil peeled and chopped potatoes in salted water until tender, about 15-20 minutes.

    Mash and mix

    Drain potatoes and return to pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.

Vegetable Preparation

    Prepare vegetables

    While the ribs are braising, steam the peas and sliced carrots until tender, about 5-7 minutes. Set aside.
