Directions

  1. 1

    Prepare the Bone Marrow

Preheat your oven to 450°F (230°C). Place the bone marrow in a roasting pan and roast for about 15-20 minutes, until it is soft and bubbling. Remove from the oven and let cool slightly.

  2. 2

    Cook the Potatoes

Peel and cut the russet potatoes into quarters. Place them in a large pot of salted water and bring to a boil. Cook for about 15-20 minutes, or until the potatoes are tender.

  3. 3

    Make the Purée

Drain the potatoes and return them to the pot. Add the roasted bone marrow, heavy cream, unsalted butter, and garlic cloves (minced). Mash the mixture thoroughly until smooth and creamy. Season with salt and black pepper to taste.

  4. 4

    Serve

Plate the potato purée and sprinkle with chopped chives for garnish. Serve warm as a decadent side dish.
