    Prepare the Salmon

    Preheat your wood-fired grill to high heat. Brush the salmon fillets with olive oil and season with salt and black pepper.

    Grill the Salmon

    Place the salmon fillets on the grill skin side down. Grill for about 6-8 minutes on each side, or until the salmon is cooked through and has grill marks.

    Cook the Polenta

    In a saucepan, bring the vegetable broth to a boil. Slowly whisk in the polenta, reduce heat to low, and cook while stirring for 15-20 minutes until thickened. Remove from heat and set aside.

    Sauté the Vegetables

    In a skillet, add a splash of olive oil and sauté the seasonal vegetables over medium heat until tender, about 5-7 minutes.

    Make the Blue Crab Beurre Blanc

    In a small saucepan, melt the butter over medium heat. Add the shallots and cook until softened. Pour in the lemon juice and simmer for a few minutes. Add the blue crab meat and stir gently to combine.

    On each plate, serve a portion of polenta, top with grilled salmon, sautéed seasonal vegetables, and drizzle with blue crab beurre blanc. Garnish with fresh parsley.
