Preparing the Filet Mignon

    Season the Steak

    Rub each filet mignon with olive oil, then season generously with salt and black pepper.

    Grill the Steak

    Preheat the wood fire grill. Grill the filet mignon for about 4-5 minutes per side for medium-rare, or until desired doneness. Remove from grill and let rest.

Making the Brown Mustard Emulsion

    Combine Ingredients

    In a small bowl, whisk together brown mustard, white wine vinegar, and honey. Gradually whisk in olive oil until emulsified. Season with salt and black pepper to taste.

Preparing the Mashed Potatoes

    Boil and Mash Potatoes

    Peel and chop the russet potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and mash with butter, heavy cream, salt, and black pepper until smooth and creamy.

Making the Wilted Greens

    Sauté the Greens

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add kale or spinach and cook until wilted, about 3-4 minutes. Season with salt and black pepper.
