Cake Preparation

Prepare the Cake Batter
Preheat the oven to 350°F (175°C). In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.

Bake the Cake
Pour the batter into two greased 9-inch round cake pans. Bake for 30-35 minutes or until a toothpick comes out clean. Let cool in pans for 10 minutes, then remove and cool completely on wire racks.
Mocha Cream Filling

Whip the Cream
In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar, instant coffee, and vanilla extract, and continue whipping until stiff peaks form.

Fill the Cake
Once the cakes are completely cooled, spread the mocha cream filling between the layers.
Ganache Preparation

Make the Ganache
In a saucepan, heat the heavy cream until just boiling. Pour it over the chocolate chips in a bowl, letting it sit for a few minutes. Stir until smooth.

Glaze the Cake
Pour the ganache over the filled cake, allowing it to drip down the sides.
Crème Anglaise

Heat the Cream and Milk
In a saucepan, heat the heavy cream and milk with sugar and the split vanilla bean until just simmering.

Make the Coulis
In a blender, combine raspberries, sugar, and lemon juice. Blend until smooth, then strain to remove seeds.
Chocolate Sauce

In a small saucepan, heat the heavy cream until just boiling. Remove from heat and add chopped chocolate. Stir until smooth.
