    Prepare the Pasta

    Cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Roast the Tomatoes

    In a large skillet over medium heat, add a splash of olive oil and the halved cherry tomatoes. Cook until they are blistered and slightly caramelized, about 5-7 minutes.

    Cook the 'Nduja and Shrimp

    Add the 'Nduja sausage to the skillet and break it apart with a spoon. Cook for 3-4 minutes until it starts to melt. Then add the shrimp and cook until they turn pink, about 3-5 minutes.

    Add Flavorings

    Stir in the minced garlic and Calabrian chili paste, cooking for another 1-2 minutes until fragrant.

    Make the Sauce

    Add the butter and lemon juice to the skillet, stirring until the butter is melted and the sauce is well combined. Season with salt and black pepper to taste.

    Combine with Pasta and Greens

    Add the cooked penne and baby spinach to the skillet, tossing everything together to coat the pasta in the sauce and wilt the greens.

    Finish and Serve

    Remove from heat and stir in the fresh basil. Serve immediately, garnished with additional basil if desired.
