Method
Scone Preparation
- 1
Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- 2
Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- 3
Cut in Butter
Cut the cold unsalted butter into the dry mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- 4
Combine Wet Ingredients
In a separate bowl, whisk together the heavy cream, vanilla extract, and egg until well combined.
- 5
Form the Dough
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- 6
Shape the Scones
Turn the dough out onto a floured surface and gently knead it a few times. Pat it into a circle about 1 inch thick. Cut into wedges or use a biscuit cutter.
- 7
Bake
Place the scones on the prepared baking sheet and bake for 15-20 minutes or until golden brown.
- 8
Cool and Serve
Let the scones cool on a wire rack. Serve warm with lemon curd and whipped cream.
