    Prepare the Dough

    In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5-10 minutes until frothy. In a large mixing bowl, combine the flour and salt. Create a well in the center and add the yeast mixture and milk. Mix until it forms a dough.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 10 minutes until smooth. Place it in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.

    Incorporate Butter

    Roll out the dough into a rectangle and place the chilled butter in the center. Fold the dough over the butter and seal the edges. Roll out again into a rectangle and fold into thirds. Repeat this process two more times to create layers.

    Shape the Croissants

    Roll the dough into a large rectangle and cut into triangles. Starting from the wide end, roll each triangle up toward the point. Place on a baking sheet lined with parchment paper.

    Proof the Croissants

    Cover the shaped croissants and let them rise for another 1 hour until puffy.

    Bake the Croissants

    Preheat the oven to 400°F (200°C). Beat the egg and brush it over the croissants. Bake for 15-20 minutes until golden brown.

    Serve

    Let the croissants cool slightly before serving with butter and your choice of preserves.
