Flatbread Preparation

    Make the Dough

    In a bowl, combine warm water and yeast. Let sit for 5 minutes until frothy. In a large mixing bowl, combine flour and salt. Pour in yeast mixture and olive oil. Mix until a dough forms. Knead on a floured surface for about 5 minutes until smooth.

    Let the Dough Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour or until doubled in size.

    Prepare the Toppings

    While the dough is rising, thinly slice 2 large onions and sauté in a pan over medium heat with a little olive oil until caramelized (about 20-25 minutes).

    Assemble the Flatbread

    Preheat the oven to 475°F (245°C). Roll out the dough on a floured surface to your desired thickness. Place on a baking sheet. Spread a layer of fig jam over the dough, then top with caramelized onions, crumbled gorgonzola, and chopped walnuts.

    Bake

    Bake in the preheated oven for about 12-15 minutes, or until the flatbread is golden brown.

    Once baked, remove from the oven and top with fresh garden rocket. Slice and serve warm.
