    Make Chive Oil

    In a blender, combine the fresh chives and olive oil. Blend until smooth. Strain through a fine mesh sieve into a small bowl, discarding the solids. Season with salt and pepper to taste.

    Prepare Crostini

    Preheat the oven to 180°C (350°F). Slice the baguette into 1/2 inch thick slices. Arrange on a baking sheet and brush both sides with olive oil. Bake for about 10-12 minutes or until golden and crispy. Remove from the oven and rub one side of each crostini with the garlic clove.

    Assemble the Dish

    Place the burrata cheese on a serving platter. Drizzle with the chive oil and season with additional salt and pepper if desired. Serve alongside the toasted crostini for dipping.
