    Make the dough

    In a large mixing bowl, combine the warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy. Add the all-purpose flour, whole wheat flour, rye flour, milk, butter, and salt. Mix until a dough forms.

    Knead the dough

    Turn the dough out onto a floured surface and knead for 8-10 minutes until smooth and elastic. If making gluten-free bread, replace all-purpose flour with gluten-free flour and add xanthan gum.

    First rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours or until doubled in size.

    Shape the bread

    Punch down the risen dough, then shape it into loaves or rolls as desired. For English muffins, flatten into rounds.

    Second rise

    Place shaped loaves or rounds on a baking sheet, cover, and let rise for another 30-60 minutes.

    Bake the bread

    Preheat the oven to 375°F (190°C). Bake the bread for 25-30 minutes or until golden brown and sounds hollow when tapped on the bottom.

    Cool and serve

    Remove from oven, let cool on wire racks, and slice as desired.
