Make the Crust
In a large bowl, combine flour, sugar, and salt. Cut in the butter until mixture resembles coarse crumbs. Stir in cold water, a tablespoon at a time, until mixture forms a dough. Shape into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

Assemble the Crostata
Preheat the oven to 375°F (190°C). On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer to a parchment-lined baking sheet. Pile the apple mixture in the center, leaving a 2-inch border. Fold the edges of the dough over the apples, pleating as necessary.

Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the apples are tender.

Serve
Drizzle the remaining caramel sauce over the warm crostata and serve with scoops of buttermilk ice cream on the side.
