Steak Pappardelle Gorgonzola Ingredients

Method

Steak Pappardelle Gorgonzola Directions

  1. 1

    Cook the Pasta

In a large pot, bring salted water to a boil. Add the pappardelle pasta and cook according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Steak

Season the flat iron steak with salt and black pepper on both sides. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the steak and sear for about 4-5 minutes on each side, or until it reaches your desired doneness. Remove from the skillet and let it rest for 5 minutes before slicing.

  3. 3

    Sauté Vegetables

In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and cook for about 30 seconds until fragrant. Then, add the fresh spinach and halved cherry tomatoes. Sauté for 2-3 minutes until the spinach is wilted.

  4. 4

    Make the Gorgonzola Sauce

Reduce the heat to medium-low and pour in the heavy cream, stirring constantly. Once it begins to simmer, add the Gorgonzola cheese and stir until melted and smooth. Season with additional salt and pepper to taste.

  5. 5

    Combine Pasta and Sauce

Add the cooked pappardelle pasta to the skillet with the Gorgonzola sauce, tossing to coat the pasta evenly. If the sauce is too thick, add a bit of pasta water to reach the desired consistency.

  6. 6

    Serve

Slice the rested steak into strips. Divide the pasta mixture onto plates, top with sliced steak, and garnish with fresh basil. Serve immediately.
