Mashed Potatoes with Garlic Cream Sauce

    Prepare the Salmon

    Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Once hot, place the salmon fillets skin-side down in the skillet. Sear for 4-5 minutes until the skin is crispy and golden brown.

    Finish Cooking the Salmon

    Flip the salmon fillets and cook for an additional 3-4 minutes, or until the salmon is cooked to your desired doneness. Squeeze fresh lemon juice over the top before serving.

Sautéed Vegetables

    Prepare the Vegetables

    Wash and chop the bell peppers, zucchini, and carrot into bite-sized pieces. Mince the garlic cloves.

    Sauté the Vegetables

    In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant. Add the chopped vegetables, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender but still slightly crisp.

Mashed Potatoes with Garlic Cream Sauce

    Prepare the Potatoes

    Peel and chop the potatoes into evenly sized chunks. Place them in a pot and cover with water. Add a pinch of salt and bring to a boil.

    Cook the Potatoes

    Boil the potatoes for about 15-20 minutes or until they are fork-tender. Drain and return to the pot.

    Make the Garlic Cream Sauce

    In a small saucepan, melt 4 tablespoons of butter over medium heat. Add 2 minced garlic cloves and sauté for 1-2 minutes. Pour in 1 cup of heavy cream and bring to a simmer. Stir well and season with salt and black pepper.

    Mash the Potatoes

    Add the garlic cream sauce to the drained potatoes. Mash until smooth and creamy. Adjust seasoning with salt and pepper to taste.
