Method

Prepare Seafood

  1. 1

    Clean Shellfish

Rinse clams and mussels under cold water, scrubbing the shells to remove any debris.

  2. 2

    Steam Shellfish

In a large pot, bring water to a boil. Add clams and mussels; cover and steam until they open, about 5-7 minutes. Discard any that do not open.

  3. 3

    Add Shrimp

In the last minute of steaming, add shrimp to the pot to cook them quickly.

  4. 4

    Set Aside Seafood

Remove seafood from pot and set aside. Keep the cooking liquid for later use.

  5. 5

    Prepare Fish

Cut halibut and salmon into bite-sized pieces.

Cook Pasta

  1. 6

    Cook Pasta

In a large pot, bring salted water to a boil. Add spaghetti or linguine and cook according to package instructions until al dente.

  2. 7

    Drain Pasta

Reserve 1 cup of pasta water, then drain the pasta and set aside.

Make Scampi Sauce

  1. 8

    Heat Oil and Butter

In a large skillet over medium heat, combine olive oil and butter until melted.

  2. 9

    Sauté Garlic

Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

  3. 10

    Add Wine and Seasonings

Pour in white wine and bring to a simmer. Add lemon juice, red pepper flakes, salt, and black pepper.

  4. 11

    Combine Seafood and Sauce

Add cooked seafood (clams, mussels, shrimp, halibut, and salmon) to the sauce and stir gently to combine.

  5. 12

    Adjust Sauce Consistency

If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

  6. 13

    Finish Sauce

Stir in fresh parsley just before serving.

Prepare Garlic Bread

  1. 14

    Preheat Oven

Preheat the oven to 375°F (190°C).

  2. 15

    Make Garlic Butter

In a small bowl, mix softened butter, minced garlic, and chopped parsley until well combined.

  3. 16

    Prepare Baguette

Slice the French baguette in half lengthwise and spread the garlic butter mixture on both halves.

  4. 17

    Bake Garlic Bread

Place the baguette halves on a baking sheet and bake for 10-12 minutes or until golden brown.

Combine and Serve

  1. 18

    Combine Pasta and Sauce

Toss the cooked pasta with the seafood scampi sauce until well coated.

  2. 19

    Serve

Serve the seafood scampi over the pasta with a side of garlic bread.
